To rigorously determine the quality of a hop variety, a range of specialized instruments is typically required. In the context of craft beer production, however, such conditions are often not available, and we usually have to rely on visual and sensory cues for initial assessment.
There are over 200 hop varieties worldwide, each with distinct characteristics. In terms of color, for example, Czech Saaz typically appears emerald green; the German Hallertau series is generally deep green; while American hop varieties show more complex coloration, ranging from yellowish to brownish or even greenish. In terms of pellet appearance, differences arise from the processability of the hop variety and the manufacturing equipment used by different suppliers. For instance, Golding hops usually form elongated pellets, Willamette pellets tend to be more fragmented, while varieties like Cascade and Palisade produce relatively larger, coarser pellets. Even the same variety can vary in appearance across different batches and manufacturers. Therefore, in practice, hop quality is often judged primarily by color.
Fresh hops should have a bright, lustrous appearance, with uniform pellet size, and should not exhibit any unpleasant aromas. By “bright and lustrous,” we mean the pellets should have a slightly oily sheen. If hops have been stored for an extended period, exposed to high temperatures, oxidation, or direct sunlight, their appearance becomes dull. In addition, hops that have been oxidized or exposed to light may develop off-flavors or even unpleasant odors. Hops that have been stored too long also tend to accumulate broken pellet fragments at the bottom due to friction between pellets.
Whenever hops show excessive fragmentation, a dull appearance, or any off-putting aromas, we generally consider their quality to be compromised. The quality of raw materials ultimately reflects directly in the flavor of the beer—and behind this lies not only the brewer’s ability to evaluate ingredients but also the equipment’s capacity to execute the process reliably throughout brewing.
